Emulsifiers and Stabilizers


Emulsifiers and stabilizers may be listed as polysorbate 80, mono and diglycerides, soy lecithin, carrageenan, xanthan gum, or guar gum. They help oil and water stay mixed and help foods retain a smooth, uniform texture. They are often used in ice cream, sauces, dressings, packaged breads, and beverages.
